When very young, a ride in the buggy with the family was wonderful. we were off to see our nana at Quindanning.

As we got older our friends were all getting cars and we felt very embarrassed to be seen in the buggy.

Now that we are much older we realise that it was a wonderful way to travel. We had time to count the rabbits or cars (there weren’t many), look for spider orchids or goannas. One time we saw two longtails (Cardies), fighting. Dad had to take care with the horse as she was a bit timid about passing these lizards. There were also times when Dad had to cut limbs off the road so that we could get through.

Occasionally, if it was a rainy day when the time calm to go home, joy of joys, Uncle would bring us back in “the Tin Lizzie”. Poor Dad had the lonely, wet trip home by horse and buggy.

Chicken and Vegetables

This is an easy, all in one recipe cooked in a frypan set at 125° C. The leftovers (if any), cut up finely when cold. make a tasty sandwich filling.

Ingredients

3 – 6 chicken thighs, skinned

1 potato, chopped

1 carrot, chopped

Pumpkin, chopped

A dew green beans, stringed and chopped

Celery, chopped

Pinch of salt

A little water

Pinch of dried thyme

Method

Brown the chicken thighs with salt and a little water to lift. Turn the chicken over Add all the vegetables and thyme and cook until tender. Continue to add water to keep the mixture moist.
