Cathy Rayner (Née Smith)

Cathy grew up on a farm at Crossman, the eldest daughter of Fay and Danny Smith, long time residents of the district. Cathy finished her education at Santa Maria College and worked in Perth until her marriage in 1977, when she returned to Boddington. Cathy and Ben spent three years working in Queensland and after a couple of years in Bulyee are now back on the farm at Crossman. Interested in most sport, Cathy’s primary interest in the arts Council is with ceramics.

Lemon Pudding

Ingredients

1 tablespoon butter

½ cup sugar

2 eggs, separated

Juice and rind of 1 lemon

1 tablespoon self raising flour

300 ml milk

Method

Melt butter. Beat butter sugar, lemon juice and rind(grated) and egg yolks together. Add flour and milk and mix well. Beat egg whites until stiff and fold into the mixture. Place in casserole dish and bake in moderate oven for one hour. Delicious with cream.

Spicy Apple Pudding

Ingredients

2 apples

1 cup self raising flour

⅓ cup sugar

1 egg

60 g melted butter

1 cup water

3 level tablespoons brown sugar

30 g butter

1 teaspoon mixed spice

Method

Peel, core and dice apples. Place in a bowl with flour and mix well. add sugar and mix in egg to make a smooth paste with the melted butter. Spread into a small buttered casserole.

In a saucepan, combine water, brown sugar, spice and 30g butter. Heat until the butter melts and pour over the batter. Bake in a moderate oven for 35 minutes.
