Cathy Wheatley (Née Clark)

Cathy was born in South Australia and for four years lived with her parents, two brothers and two sisters in a two house township called Carol. The family came to Perth in 1977 and Cathy completed her education at Rossmoyne High. When her parents moved to Orange Grove in 1983, Cathy worked there as a stable hand and, a track rider with gallopers. In 1985 Cathy came to live and work on “Avon Downs” and in 1986 she married Rowan Wheatley whose she had known since primary school days. Cathy and Rowan have a small son and another child due in November. A country girl at heart, Cathy loves living on “Avon Downs” and, since coming here has become involved in tennis, basketball, netball and pottery.

Thirty Minute Pudding

Ingredients

1 cup self raising flour

1 dessertspoon butter

¼ cup milk

1 dessertspoon sugar

1 egg

Pinch salt

Method

Cream butter and sugar. Add beaten egg, milk and lastly flour. Mix thoroughly. Put into buttered mould and boil for thirty minutes.

Potato Cake

1 cup warm mashed potato

2 tablespoons butter

2 eggs

1½ cups sugar

1½ cups milk

4 cups self raising flour

1 cup sultanas

½ teaspoon nutmeg

Topping

90 g butter

1 cup plain flour

½ cup sugar

1 teaspoon nutmeg

Method

place potato, butter, sugar, eggs and milk in the bowl of an electric mixer and beat together. Add flower, sultanas, and nutmeg and beet well. spread on lightly greased slide.

Topping

Reb butter into flour. Add sugar and, nutmeg. Sprinkle on top of mixture and bake in moderate oven for 35 minutes. A greased oven tray can be used instead of a slide.
