Born in Te Kuiti, New Zealand, Colleen came to us in 1977 with her husband Mike, from the lovely North Island district of Lake Taupo. Their two daughters, Lisa and Erin, were both born here. Colleen is actively involved in badminton and tennis and is well known for her delicious sweets and cakes and, her lovely knitting. Almost a dinkum Aussie, the only time the “kiwi” shows is during the cricket tests and then there is no doubt.
Banana Cake
Colleen is well known for her lovely cakes and this is a delicious example.
Ingredients
125 g butter
2 eggs
1 teaspoon bicarbonate of soda
2 cups self raising flour
½ cup castor sugar
3 ripe bananas, mashed
¼ cup milk
Method
Grease 23 cm x 13 cm x 8 cm loaf tin. Set oven at 190°C . Cream butter and sugar. Beat in eggs one at t time. Add mashed bananas and beat well. Combine bicarbonate of soda and milk and add to creamed mixture alternately with sifted flour. Place in prepared tin and bake for 40 – 50 minutes. Like all banana cakes this will stay moist and keep extremely well.
