Elaine was born in South Australia. Her father was a seaman and altogether she attended fourteen different schools between Brisbane and South Bunbury. Her early life included seven trips across the Great Australian Bight in the M V Manunda before she had reached the age of seven! on the death of her father, Elaine came to live with her grandparents in Bunbury. there followed a period in the Navy (Trans) as a dental nurse and on discharge Elaine did a rehabilitation course as a general nurse at the Mount Hospital. During her final year of training Elaine met and married Kevin Sherry and came to join him on his property at Quindanning. When their two children, Colleen and Ray had grown up Elaine went to help out at the Boddington Hospital for three weeks; there three weeks eventually became eleven years! Now officially retired, Elaine has time to devote to her hobbies which include reading, ceramics, tapestry and travelling.
Real Scotch Shortbread
Elaine collected this recipe on a trip to Scotland to visit relatives. It came from the Kyle of Tongue on the north coast.
Ingredients
1 cup plain flour
170 g butter
½ cup rice flour
½ cup custard powder
¼ cup icing sugar
Method
Cream butter, add icing sugar and beat well. Sift in flours and custard powder. Mix well. Role into sausages and chill. Roll in sugar, cut in slices and bake in a moderate oven for 10 to 15 minutes.
