The recipe selected is for avocado icecream, an interesting and unusual choice. This icecream is great for a complete change of colour, pale green and the flavour is subtle. As avocados are nearly always a reasonable price, these days, it makes a change using them as a dessert rather than an entree with a vinaigrette dressing and perhaps filling them with prawns.
Avocado Icecream
Ingredients
1 medium avocado
2 tablespoons ;e,pm juice
½ cup brown sugar
1 cup milk
1 cup orange juice
1 teaspoon grated lemon rind
1 cup cream or whipped chilled evaporated milk
Method
Scoop out avocado and mash with lemon juice. Combine all ingredients and partially freeze. Beat until smooth and fluffy. Refreeze.
I used honey and if you like to taste more avocado, leave out half the lemon juice and all the lemon rind sit is very lemony. I also threw in an egg last time plus low fat yoghurt and less cream. It all seems to work out well and, is delicious!
