Norma Patten (née Fagerholm)

orma was quite well known to local folk who she married John and came to live on the family property “Floral Park”.Although born and educated in Narrogin, through school and sport she made many contacts with Boddington people. Now the proud mother of four, Norma is very active in the community, her interests ranging from the CWA through to most sporting groups. Norma is a very capable home maker and willing to have a go at most craft activities.

Tomato Soup

Ingredients

1½ litres water plus ham or bacon bone or two bacon cubes

1½ kg tomatoes, skinned and chopped

2 large onions, chopped

3 stalks celery, chopped

2 carrots, chopped

½ to ¾ cups perl barley

Salt and pepper

1 dessertspoon flour made into a paste

1 can tomato soup

Method

Put water in a large pot and add tomatoes, onions celery, carrots, barley and, salt and pepper. Cook for 2 hours. Add flour and tomato soup. When cool put in blender or kitchen whizz. to serve add 1 part soup to ½ water and ½ milk. This recipe freezes will and is a marvellous way to use up some of those surplus tomatoes, if you grow your own.

Salmon Casserole

Ingredients

1 450 g tin salmon, boned and flaked

1 440 g tin spaghetti is tomato sauce and cheese

1 cup grated cheese

Breadcrumbs

Extra cheese

Method

Mix together salmon, spaghetti and 1 cup grated cheese in a casserole dish. Top with breadcrumbs and extra grated cheese. Heat through in a moderate oven or microwave. Serve with chips of veggies.

This recipe is a very handy standby for unexpected guests, as all the ingredients are usually found in the pantry and it only has to be heated through.

Lazy Man’s Cake

Ingredients

1 cup self raising flour

2 tablespoons butter

1 cup milk

1 cup desiccated coconut

½ cup sugar

2 eggs, separated

½ teaspoon vanilla essence

Method

Cream butter and sugar. Add egg yolks and milk. Mix will and add flour. Put into a 23 cm greased Tim. Beat egg whites until stiff, add ⅓ cup sugar and fold in coconut and vanilla. Place on top of the cake.

Cook in moderate oven for 35 minutes. If preferred, a small amount of jam can be spread between the cake and the topping. When cooked, the cake is ready to slice.
