Trudy Wessells was born and grew up on the then Dutch Island of Sumatra. Interned with her family by the Japanese during the war on Java, she later returned to Holland. However the weather and, crowded conditions did not appeal and at the age of twenty, Trudy and her sister came to WA, where her first job was as a nurse at the Albany Hospital. two years later Trudy married a tall Dutchman whose she had first met in Holland and after living in Perth and Mullewa, the family bought a farm in the Boddington district and have now been here for twenty-one years. trudy is an enthusiastic gardener and collector of stamps, coils and rocks. Over the past years she has become well known for her oil paintings, mainly of local scenes. Trudy had always loved painting, it is in her blood, her great grandmother and uncle were both well know artists in Holland.

Ingredients
4 tablespoons margarine
½ cup milk
4 tablespoons sugar
4 tablespoons plain flour
½ teaspoon bicarbonate of soda
2 tablespoons custard powder
few drops vanilla essence or almond essence
Method
Mix margarine, milk and sugar thoroughly. In a separate bowl mix flour, bicarbonate of soda and custard powder. Add both mixtures together, add vanilla essence and beat well. Place teaspoons of mixture on a greased tray and bake in a moderate oven until bolden brown.
for a change four spoonfuls of coconut can be added to the mixture.
