Wendy Fatin

Wendy is the Federal Member for Brand and was a guest speaker in a series called UPDate Your Life, which featured successful and interesting women. Wendy certainly qualifies on both these aspects and she presented a very stimulating and thought-provoking evening.

Cheese Scones

Credit for this one has to go to “Cranks” – that wonderful group of health food restaurants in England. I found the recipe ion one of the “Cranks” cookbooks, which are a great investment if you ever come across them.

Ingredients

450 g 100% wholemeal flour

30 ml baking powder

Large pinch salt

Lange pince cayenne pepper

50 g butter

300 g Cheddar cheese, grated

284 ml milk

Method

Put the flour, baking powder, salt and cayenne in a basil, Rub in the butter until the mixture resembles fine crumbs. Stir in 225 g cheese and sufficient milk to give a soft, manageable dough. Knead gently, then roll out to 2.5 cm thickness. Stamp out 7.5 cm rounds with a fluted cutter. Brush with milk and sprinkle with the remaining cheese. Bake in the oven at 200° for about 20 minutes, until golden. Cool on a wire tray.

Makes 15 scones.
